Banana Bread

Sea Level Ingredient Amounts
- 10 ounces all-purposed flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 5 ¼ ounces brown sugar
- 4 ounces eggs, beaten
- 19 ¼ ounces mashed overripe bananas
- 1 tablespoon vanilla
9,000 Foot Elevation Ingredients
- 12 ounces all-purposed flour
- 1 teaspoon baking soda
- ¼ teaspoon table salt
- 3 ¼ ounces butter
- 4 ¾ ounces brown sugar
- 5 ounces eggs, beaten
- 16 ounces mashed overripe bananas
- 4 ounces buttermilk
- 1 tablespoon vanilla
Sea level baking time per recipe: 60 to 65 minutes. Baking time at 9,000 feet: 60 minutes.
1. Preheat oven to 350 degrees. Lightly grease a 9×5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and sugars. Stir in eggs, mashed bananas and buttermilk (for high altitude) until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
