Sea Level Ingredient Amounts

  • 8 ounces unsalted butter
  • 12 ounces granulated sugar
  • 3 ½ ounces egg yolks
  • 6 ounces milk
  • 1 ½ teaspoons vanilla extract
  • 8 ¼ ounces cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

9,000 Foot Elevation Ingredients

  • 6 ¾ ounces unsalted butter
  • 10 ½ ounces granulated sugar
  • 4 ¼ ounces egg yolks
  • 7 ¾ ounces milk
  • 1 tablespoon vanilla extract
  • 10 ounces all-purpose flour, NOT cake flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Sea Level baking time per recipe: 25 to 30 minutes.
Baking time at 9,000 feet: 30 minutes.

1 .Preheat oven to 350 degrees. Line the bottoms of 2 8-inch round pans with parchment paper. Sift together the flour, baking powder and salt. Set aside.

2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing until just incorporated. ** For high altitude, mix on medium-high speed for 20 seconds to develop gluten.

3. Bake in preheated oven until top springs back when lightly touched. Cool 15 minutes before turning out onto cooling racks.
